Aaah - pierogies aren't usually on the tip of everyone's tongue (wink) when it comes to dinner ideas but once they're crisping up in some hot butter with some extra bacon they become the dream meal which you never want to end. Like meatloaf, there are as many versions as there are family members - and that's if you consider only the savory kind of pierogies. [The dessert options are an entirely different genre.] For G'farm, we keep it pretty basic, of course using some G'farm Mulefoot pork in the filling (last batch we used leftover smoked ham but we usually use bacon) with sautéed onions and mashed potatoes. Anything that doesn't get put into the filling can be sautéed in butter to eat alongside the pierogies. Fillings & sauces can easily be adjusted to suit vegetarian or vegan preferences. Always well worth the effort to make something from scratch - the extra effort is two-fold in this case - any extra pierogies freeze perfectly and can be enjoyed whenever the mood hits you. ***n.b. for anyone into theme dinners - pierogies are perfect for "winter weather" dinners, russian movie night dinners (did someone say, "Dr. Zhivago"?). And for you foragers out there - sautéed wild mushrooms over pierogies is just magic.
