I picked a bunch of favas yesterday so I could make room for my cucumber fence - and realized I needed some good recipes in which to use my fava beans (I wanted something a bit more creative than the standby of pasta primavera). After a bit of googling and reading - I found two recipes that were different, easy, tasty and healthy - and really showcased the fresh favas.
Ricotta Gnocchi with Fava Beans and Leeks
Both the favas and leeks are ready for harvest in the garden so it's a great season-specific recipe for al of the ingredients. The ricotta gnocchi were very easy to make (I think they're called gnudi!) and there's very little prep and cooking time other than rolling the dough for the gnocchi. Serve over a bed of wilted kale, dandelion greens, spinach and swiss chard (all from the garden, too) and you've got extra vitamins and minerals on your dish!
Fava Bean and Goat Cheese Dip
This recipe is great - especially for those who want to enjoy the fresh favas in season now but don't want to have yet another pasta dish with fava beans. If you're off carbohydrates all together - you can use fresh vegetables as the "vehicle."
